Native to southern Europe, fennel is a perennial herb and relative to caraway and anise, all of which bear aromatic fruit or “seeds.” Its smooth stalks produce golden flowers that bloom in late summer, which transform to powerhouse kernels used in flavoring everything from main dishes and desserts to liqueurs and medicines. Its large bulb vegetable variety finocchio is derived from the Latin word for “fragrant hay.”
